Beans in a Flask with dressed with Olive Oil accompanied by white Orcia doc Wine

Flavors and aromas of the Val d’Orcia in an original dish of the Orcia territory

The recipe from the Val d’Orcia for beans in the flask dressed with olive oil will take you back to the old days, when agricultural workers, arriving home after a full day’s work in the fields, emptied the flask of wine, filled it with beans and spices and let them  cook slowly hanging over the embers in the fireplace. It is a long procedure but not at all difficult, you just have to be careful with the cooking time.

So you need a flask, some excellent white cannellini beans and a fireplace to prepare this traditional Tuscan dish, ideal to taste with a good glass of white Orcia Doc wine!

Ingredients (for 4 people)

-350 g of dried cannellini beans

-150ml of extra virgin olive oil

-5 sage leaves

-a clove of garlic

Black pepper in grains, salt and pepper as necessary

PREPARATION

Before starting remember that you must soak the beans in water for at least 12 hours ,so the whole procedure takes a long time.

Drain and rinse the beans in cold water then put them into the flask with the sage, garlic and oil, salt them and add the grains of pepper. Fill ¾ of the flask with water and close it.

Now for cooking the beans : if you have a fireplace prepare the embers and put the flask over them (possibly hang it over the embers) and let the cannellini beans cook for about 3 hours. If this method is not possible, immerge the flask in a pan of water (where you have put a cloth on the bottom) and cook for about 5 hours, adding water gradually as it evaporates.

When cooked, pour the contents in a soup bowl, add a little more salt and pepper and dress it all with oil. Now you can serve the dish and enjoy your “fagioli al fiasco” piping hot.

Wine suggestion

White Orcia Doc: 50% Tuscan Trebbiano grapes plus other non aromatic authorized varieties. It put on the market after 1 March of the year following vintage.
