It’s Time to do the “svinatura” in the Orcia Doc Wineries

All the stages f wine making from fermentation to vinification of the “most beautiful wine in the world”

In the wineries of Orcia Doc wine after the process of fermentation it’s time to do the “svinatura”. This is a process where the liquid part, wine, is separated from the solid part composed of the lees and marc when making red wine and only of lees in white wine making.

The liquid obtained from the drawing off is called “vino fiore” ( the wine flower) and is the most delicate and refined product. In white wine making, if necessary, an operation of clarification can be carried out.

When making red wine the marc is pressed to extract all the liquid content. This operation is done over again applying increasing pressure.

In 2015 we discovered  something new: the process of fermentation can take place in amphoras too. After the first part of the fermentation the must is taken away from the marc and put into amphoras to rest where the fermentation process is completed.

And from the spontaneous fermentation of Sangiovese grapes the “most beautiful wine in the world”, Orcia doc, is born.
