Schiacciata with grapes: the traditional recipe in Val d’Orcia

All the ingredients for the tastiest “schiacciata” made during the grape harvesting period in the vineyards of Orcia doc wine

This “schiacciata” with grapes (a flat piece of sweet bread) is a specialty linked to the vintage time and is prepared in September and October. In the vineyards during grape harvesting this cake, which was once a poor sweet, represents a must of the cooking tradition . Its modest origins can be seen in the simplicity of the ingredients:  bread dough, olive oil, sugar and black grapes.

This is the easy recipe from the Val d’Orcia, cooking time about 50 mins.

Ingredients for 6 people:

  • 500 g bread dough when it has risen
  • 150 g sugar
  • Olive oil
  • 1 kilo of black grapes for wine making, possibly Canaiolo variety
  • A spoonful of crushed aniseed.

Preparation:

Incorporate 4 spoons of olive oil and 50 g of sugar into the bread dough and make it into a thin sheet.

On a floured table make half of the sheet of pastry into the rectangular shape of the baking tin you’ll use. Grease the tin, line it with  the pastry and add about 700g of washed and dried grapes onto it, adding 4  spoons of sugar and 2 of oil.

Add another layer of the pastry, covering it with the remaining grapes and sugar and sprinkle with 2 spoons of oil.

Bake at medium heat (180 degrees ) for about 50 minutes.
